Oat Muffins with Crystallized Ginger

What you'll need

Ingredients

  • 1 cup white whole wheat flour (King Arthur)
  • ½ cup oat flour (Bob’s Red Mill)
  • ¾ cup rolled oats
  • ¾ cup brown sugar
  • 1 tablespoon baking powder
  • ½ tsp. salt
  • 1 cup plus 2 T milk (9 ounces)
  • ¼ cup oil or melted butter
  • 2 eggs
  • 1 tsp. vanilla
  • ½ cup crystallized ginger (3 ¼ ounces)
  • 1 Tablespoon sugar
  • ½ tsp cinnamon
  • ¼ tsp. ground ginger

The method

    Preheat oven to 400 degrees. Grease muffin tin or line with papers. Mix together topping, if using, and set aside.

    Stir together the flours, oats, brown sugar, baking powder, and salt in a large bowl. In a separate bowl, beat together milk, oil, eggs, and vanilla. Gently stir wet ingredients into dry, mixing only enough to blend. Stir in crystallized ginger.

    Scoop batter into muffin tin and sprinkle with topping. Bake until golden brown, about 20 minutes. Cool for 5 minutes in pan and then turn out onto wire rack.
