What you'll need
Ingredients
1 cup (7 ounces) sugar
2 large eggs
1/2 cup vegetable oil
1 1/2 teaspoons vanilla
1/2 cup (2 ounces) King Arthur 100% White Whole Wheat Flour
1 cup (4 1/4 ounces) King Arthur Unbleached All-Purpose Flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup (1 3/4 ounces) rolled oats (plus a few for sprinkling)
3/4 cup (5 ounces) applesauce
1/2 cup (2 ounces) chopped walnuts (lightly toasted)
The method
Directions

Preheat oven to 350°F and adjust rack to center position. Grease a 9x5 loaf pan.

In a large bowl, mix together the sugar, eggs, oil and vanilla.

In a separate bowl, mix together the flours, baking powder and soda, and spices, and add them to the wet ingredients in the bowl. Mix in the oat flakes, applesauce, and walnuts.

Pour the mixture into prepared 9 x 5-inch loaf pan and sprinkle top with a few rolled oats. Bake for 55 to 60 minutes, until a toothpick comes out clean when you test the bread. Remove the bread from the oven, and cool on rack for 5 minutes. Run a thin knife around edge of pan and remove loaf from pan and return to rack to cool completely.
